Meat Loaf

Total: 1 hr 25 min
Cook: 1 hr 25 min
Yield: 6 servings
Level: Easy

Ingredients

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Directions

Preheat the oven to 325 degrees F.

Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.

In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don’t mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

    I am making this for the second time and it is the most delicious meatloaf we have ever had! Usually, I don't care for meatloaf – but I so look forward to having it again (it is in the oven as we speak!)I did not use the same amount of meat in the recipe, but just adjusted for it. Also, I use ground Sirloin as ground chuck, although more moist, has too much fat for me and upsets my tummy. If you have not tried this meatloaf – what are you waiting for?!

    Ma’am, I am a man with a few words in three days I made three meatloaf and failed on the taste. I came upon your recipe not judging yet, and I said to myself why not give it a whirl I’m a very persistent person. Needless to say I took your recipe card And followed it Word for Word to a T and I can honestly say it really made me feel wonderful after letting it set for 15 minutes I pierced the end with a fork took a bite. And yes I felt wonderful. Finally a recipe that I can enjoy. It is definitely a keeper. Thank you so much for sharing.

    I, too have tried to duplicate my Mom's wonderful meatloaf recipe. This is close. But I remember she added shredded carrots too. But she did NOT put it in a loaf pan; she did it your way and so do I. Thank you for your recipe – thank you AGAIN AND AGAIN! NOTICE TO ALL YOUNG'UNS OUT THERE. DON'T THINK YOUR MOTHER OR GRANDMOTHER WILL BE HERE FOREVER. IF YOU LOVE DISHES THEY MAKE, HAVE A NOTEBOOK IN YOUR PURSE OR CLOSE AT HAND AND ASK HER OR WATCH HER COOK. You will be grateful you did this later on in life. I wish I had done that.

    The opposite of other chefs. 3 eggs, put ketchup on the last 10 minutes. 2lbs of ground chuck. Good stuff. Iv'e made meatloa 20 different ways. Some better than the others
