Pork Shoulder Pot Roast with Winter Vegetables
RECIPE COURTESY OF GEOFFREY ZAKARIAN
Level: Intermediate
Total: 12 hr 30 min (includes salting and resting times)
Active: 1 hr
Yield: 6 to 8 servings
Ingredients
Pork Shoulder:
Kosher salt
One 3- to 4-pound boneless pork shoulder
1/3 pound pancetta, cut into 1/4-inch-thick pieces
2 sprigs plus 6 leaves fresh sage
6 cloves garlic
2 carrots, peeled and cut into large dice
1 rutabaga, peeled and cut into large dice
1 turnip, peeled and cut into large dice
1 large yellow onion, quartered
2 tablespoons tomato paste
1 tablespoon miso paste
1 sprig fresh rosemary
Two 12-ounce bottles dark beer, such as stout
2 cups chicken stock
1 tablespoon sherry vinegar
Fresh mint, for garnish
Fresh cilantro, for garnish
Fried Parsley:
Neutral oil, for frying
1 cup fresh parsley leaves
Fried Onions:
Neutral oil, for frying
1/4 cup all-purpose flour
1 teaspoon cayenne pepper
1 cup thinly sliced onion rings
Fried Capers:
1/2 cup drained capers
Neutral oil, for frying
Directions
For the pork shoulder: One day before cooking, liberally salt the pork shoulder and refrigerate uncovered.
When ready to cook, preheat the oven to 300 degrees F.
In a large Dutch oven over medium heat, cook the pancetta and 6 sage leaves over medium heat until the pancetta renders its fat and gets crispy, about 5 minutes. Using a slotted spoon, transfer the sage and pancetta to a plate lined with paper towels and set aside. Add the pork shoulder to the pancetta fat and brown the pork on all sides, about 5 minutes per side. Set aside.
Add the garlic, carrots, rutabaga, turnips and onion and cook until browned, about 4 minutes. Add the tomato paste, miso paste, rosemary sprigs and sage sprigs and cook for 1 minute more. Add the beer and chicken stock and bring to a simmer. Return the pork to the pan and add the reserved pancetta and sage. Cover and braise in the oven until fork-tender, about 3 1/2 hours. Allow the pork to rest for 30 minutes in the liquid.
For the fried parsley: Put 1/2 inch of oil in a small saucepan and heat over medium heat until 350 degrees F. Add the parsley leaves and fry until crispy, about 1 minute. Remove with a slotted spoon to a paper towel-lined plate.
For the fried onions: Put 1/2 inch of oil in a small saucepan and heat over medium heat until 350 degrees F.
Mix together the flour and cayenne in a shallow bowl. Dredge the onions in the flour mixture, shaking off any excess. Fry in batches until browned, 3 to 5 minutes. Remove with a slotted spoon to a paper towel-lined plate.
For the fried capers: Pat the capers dry with a paper towel. Fill a small saucepan with 1/2 inch of oil. Add the capers to the cold oil and turn the heat to medium. Cook until the capers are fried and crispy, 3 to 5 minutes. Remove with a slotted spoon to a paper towel-lined plate.
Remove the pork from the liquid and transfer to a cutting board. Slice the pork into 1-inch-thick pieces and transfer to a serving platter.
Stir the vinegar into the braising liquid. Pour the sauce over the pork and top with the fried capers, fried onions, fried parsley, mint and cilantro.

Loaded Pizza
RECIPE COURTESY OF TRISHA YEARWOOD
Level: Easy
Total: 1 hr 10 min (includes cooling time)
Active: 30 min
Yield: 6 to 8 servings
Ingredients
1 to 2 tablespoons olive oil
2 pounds store-bought pizza dough
1/2 cup plus 1 tablespoon marinara sauce
1/2 cup plus 1 tablespoon barbecue sauce
1 cup shredded rotisserie chicken
1 1/4 cups shredded yellow Cheddar
1 1/4 cups shredded pepper jack cheese
2 slices deli ham, diced
3 slices cooked bacon, crumbled
1/4 cup pepperoni
1/2 cup sliced red bell pepper
1/2 cup diced zucchini
1 plum tomato, thinly sliced
1/2 small red onion, thinly sliced
Directions
Preheat the oven to 475 degrees F with a rack on the lowest rung.
Drizzle the oil in a heavy, rimmed half-sheet pan and turn to coat the bottom. Add the dough and press and stretch to the corners with your fingers. (If the dough doesn’t go all the way to the corners, let it rest for 5 minutes, then once it has relaxed a bit, stretch again.)
Combine 1/2 cup each marinara and barbecue sauce in a small bowl. Put the chicken in another small bowl and add the remaining tablespoon each of marinara and barbecue sauce. Toss to coat the chicken in the sauce.
Spread the BBQ marinara mixture on the pizza crust, leaving about 1/2-inch border around the edge. Sprinkle with 1 cup each Cheddar and pepper jack. For the meat side, top with the chicken, ham, bacon and pepperoni. For the vegetable side, top with the bell pepper, zucchini and tomato. Scatter the red onion over both sides. Sprinkle both sides with the remaining 1/4 cup each Cheddar and pepper jack.
Bake the pizza on the bottom rack until the crust is golden on the bottom and the top is browned and crusty, 25 to 30 minutes. Let cool in the pan for 5 minutes before cutting into squares to serve.

The Kitchen Family Sunday Sauce
RECIPE COURTESY OF THE KITCHEN
Level: Intermediate
Total: 5 hr 45 min (includes chilling time)
Active: 1 hr 25 min
Yield: 6 to 8 servings
Ingredients
Meatballs:
1 pound ground meatloaf mix (ground pork, beef and veal)
1/2 cup plain dried breadcrumbs
1/2 cup freshly grated Parmesan
1/3 cup finely chopped fresh parsley
1 teaspoon kosher salt
1/8 teaspoon crushed red pepper flakes
1 large egg, lightly beaten
3 tablespoons olive or canola oil
Sauce:
3 tablespoons olive oil
1 pound pork bones (neck or rib)
1 pound sweet or spicy Italian sausage links
2 small onions, small dice
1 tablespoon dried parsley or Italian seasoning
Kosher salt and freshly ground black pepper
5 medium cloves garlic, very thinly sliced
1/4 teaspoon crushed red pepper flakes
One 6-ounce can tomato paste
Three 28-ounce cans whole tomatoes, preferably San Marzano, puréed in a blender, cans reserved
1 teaspoon sugar
16 fresh basil leaves, torn
For Serving:
1 pound your favorite pasta, cooked
Grated Parmesan
1 loaf crusty Italian bread
Directions
For the meatballs: Spread the ground meat mixture in the bottom of a large bowl (or on a sheet pan). Add the breadcrumbs, Parmesan, parsley, salt, red pepper flakes and egg. Use your hands to lightly mix all of the ingredients together, being careful not to overmix. Roll the mixture into balls (2 to 2 1/2 inches in diameter). You should get about 10 meatballs. Place the meatballs on a sheet pan in the fridge to rest for about 30 minutes.
Cook the meatballs: Heat a large skillet over medium-high heat. Add the oil. Working in batches if necessary, cook the meatballs in a single layer, spreading them apart so as to not overcrowd the skillet. Cook, rotating the meatballs every couple of minutes to brown all sides, 8 to 10 minutes. Use a slotted spoon or spatula to remove them to a clean sheet pan or plate. Set aside.
For the sauce: While the meatballs are cooking, heat a large pot over medium-high heat. Add the oil and let it start to smoke slightly. Add the pork bones and sear until browned, 3 to 4 minutes per side. Remove from the pot and place on a plate or sheet pan. Add the sausage to the pot and brown, 2 to 3 minutes per side. Remove from the pot and add to the pork bones.
Reduce the heat to medium-low and add the onions, dried parsley or Italian seasoning, and salt and pepper. Cook, stirring occasionally, until softened and lightly golden, 6 to 8 minutes. Add the garlic and red pepper flakes and let cook until the garlic almost liquifies in the pot, about 2 minutes. Add the tomato paste and cook, stirring frequently, about 3 minutes.
Add the puréed tomatoes. Add 1 1/2 cups water to the tomato cans and swirl them around to rinse off the residual tomato that clings to the sides. Add the tomato water to the pot along with the sugar and half the basil. Season with a large pinch of salt and some pepper. Give the pot a good stir, then add the seared pork bones, sausage and meatballs. Bring to a simmer, then turn the heat down to low. Place a lid on top of the pot, but don’t cover it completely; leave a small opening to allow some steam to escape. Cook, stirring occasionally, until the sauce has thickened a bit and the meat is tender, 3 to 4 hours. Taste the sauce for seasoning and add more salt if needed. Add the remaining fresh basil and stir gently. Serve the sauce and meat over your favorite pasta with grated cheese on the side and with a loaf of crusty Italian bread.

A chef should know better than to cook the hell out of vegetables. I braise pork shoulder with onions and celery, Ben I remove the vegetables when the pork is done as I like it. I discard the onions and celery cool but pork completely. Then when you slice it it holds together wonderfully. I reheat the braising liquid, then I add more onions and carrots and any other root vegetables I want. They are cooked fresh and are done to perfection. Not mushy.
