The coleslaw made with barbecue sauce instead of mayonnaise is very much a Lexington style barbecue kind of thing. I live not too far from Lexington, and I don't ever go there for barbecue. I grew up in the eastern part of the state on the barbecue sauce that is vinegar and peppers. That's what I consider original North Carolina Barbecue sauce, because it was brought to the shores of our Outer Banks by Blackbeard and other pirates around 1720. They brought it from the Caribbean, where it was called barbacoa. I like barbecue from all over the world, but this is unquestionably my favorite.
My barbecue sauce doesn't need refrigeration. Does yours?
