Korean Short Rib Tacos

Ingredients
Braised Short Ribs:
4 pounds (1.8 kg) boneless beef short rib, reduced into 3-inch portions
Kosher salt and broke black pepper

2 shallots, unpeeled, huge dice
1 carrot, big dice
1 celery rib, large dice
One (750 milliliter) bottle dry red wine, such as cabernet sauvignon or merlot
4 mugs (946 ml) beef broth
2 bay leaves
2 sprigs flat-leaf parsley
2 sprigs fresh thyme
Oriental Taco Sauce:
3 tbsps soy sauce
3 tablespoons sugar
2 tbsps gochujang
2 teaspoons sesame oil
Setting up:
12 tiny corn tortillas
1 tablespoon vegetable oil
2 pounds Brussels sprouts, very finely cut
1/2 yellow onion, cut
Kosher salt and cracked black pepper
Shredded short rib, from above
2 limes, reduced right into wedges, for garnish
Instructions
For the Braised Short Ribs: Preheat the oven to 325 degrees F (165 degrees C).
Warmth 1 tbsp butter and 1 tablespoon veggie oil in a toasting frying pan over medium-high heat. Brown the short rib items on all sides, about 10 minutes.
Thaw one more tbsp of butter in the pan. Bring the pot to a boil, cover with a tight fitting lid or aluminum foil, then move to the preheated oven till the short rib is very tender, about 2 1/2 to 3 hours. As soon as the brief rib is tender, remove from the oven and permit to cool a little.

Spoon several of the taco filling up into each tortilla. Serve with the Korean Taco Sauce and a lime wedge.

The successful landing makes India the fourth country — after the United States, the former Soviet Union, and China — to achieve the feat.
