Blackened Chicken Pasta
RECIPE COURTESY OF MAYMOES
Level: Easy
Total: 40 min
Active: 40 min
Yield: 4 to 6 servings

Ingredients

1 pound penne
1 tablespoon olive oil
4 boneless, skinless chicken thighs
1 cup sliced button mushrooms
1/2 cup diced tomatoes
1/4 cup sliced green onions
1 teaspoon minced garlic
2 cups heavy cream
1/4 cup shredded Parmesan
Creole seasoning, to taste

Directions

Cook the penne, then drain and set aside.

Place olive oil in a large saucepan over medium heat and add chicken; cook until cooked through, turning chicken halfway through. Remove from pan and slice into bite-sized pieces. Return chicken pieces to pan with mushrooms, tomatoes, green onions and minced garlic. Saute together while tossing occasionally for 2 minutes. Add heavy cream, Parmesan, Creole seasoning and noodles to chicken and vegetables and cook, stirring frequently to heat noodles and melt cheese. Taste and add more Creole seasoning until it’s just right. If you are brave enough to toss all the ingredients in the pan, do it! We love to catch the flame just right and it creates a wonderful show for the guests to watch.

Cook’s Note
For a little more convenience, use chicken left over from another project or buy a rotissiere chicken and shred the meat for the pasta.

    I remember submitting Maymoes to Diners, Drive in and Dives back when they still operated out of a gas station. I moved out of Utah and miss Maymoes so much!

    I go here once a week. Damn good food and service here always gets me coming back. Whether it be the fried catfish, the poboys, the shrimp and grits or the daily specials(crayfish, alligator, crab and more) this restaurant has my loyalty!😁

    okay I'm sure that's a tasty dish but the chicken isn't blackened and it's hardly smoked. also that cement mixer looks brand new and is totally unnecessary for the size batches they make. when a restaurant tries this hard to lie it concerns me.

Real Margaritas

Yield: 4 to 6 servings

Ingredients

1 lime, halved
Kosher salt
1/2 cup freshly squeezed lime juice (5 limes)
2 tablespoons freshly squeezed lemon juice (1 lemon)
1 cup Triple Sec
1 cup white tequila
2 cups ice, plus extra for serving

Directions

If you like margaritas served in a glass with salt, rub the outside rims of 6glasses with a cut lime and dip each glass lightly into a plate of kosher salt.

Combine the lime juice, lemon juice, Triple Sec, tequila, and ice in a blender and puree. Place extra ice in a cocktail shaker. Fill with margarita mix, shake well, and strain into glasses.
