Grilled Halloumi and Watermelon Kebobs

Ingredients

2 cups cubed halloumi
2 cups cubed watermelon
Olive oil
Freshly cracked black pepper
Hot honey, to serve
Fresh mint leaves, to serve

Directions

Special equipment: four 6-inch skewers, soaked in salted water

Set up your grill for direct heat by spreading the coals evenly along the bottom. On each skewer, alternately thread the halloumi and watermelon. Drizzle with olive oil and season with pepper. Place on the grill and char, about 1 minute. Flip and char the other side for 30 to 40 seconds. You are looking for grill marks on the watermelon and for the halloumi to get slightly soft. Remove to a platter and drizzle with hot honey. Sprinkle mint over the top and serve.

Ranch Chicken and Rice

Ingredients

4 bone-in, skin-on chicken breasts
2 tablespoons olive oil, plus more for drizzling
Kosher salt and freshly ground black pepper
1 small onion, finely chopped
1 garlic clove, minced
1 1/2 cups long-grain white rice
One 1-ounce package ranch seasoning powder
1/2 teaspoon ground turmeric
1 cup chicken broth
2 ounces cream cheese, cubed
1 tablespoon fresh lemon juice
2 scallions, thinly sliced
1 1/2 cups frozen peas and carrots, thawed
1/4 cup crushed ranch-flavored or plain corn chips

Directions

Preheat the oven to 400 degrees F. Line a rimmed baking sheet with parchment paper.

Drizzle the chicken breasts with olive oil and sprinkle all over with salt and pepper.

Put the chicken on the lined sheet pan skin-side up and roast until an instant-read thermometer reads 165 degrees F, 25 to 30 minutes.

In the meantime, turn the heat to medium-low on a braiser or high-sided skillet with a lid. Add the olive oil and onion and cook, stirring, until slightly softened, about 2 minutes. Add the garlic and let cook until the garlic is fragrant, about 30 seconds to a minute. Add the rice, ranch seasoning and turmeric and stir to coat. Add the chicken broth and 2 cups of water. Increase the heat to medium-high and bring to a brisk simmer. Simmer 2 minutes, then add the cream cheese, lemon juice and one scallion. Stir to incorporate.

Cover the pot and let cook until the rice is tender, 8 to 12 minutes. Remove from the heat, then uncover; fluff the rice, then stir in the peas and carrots. Replace the lid to keep warm until the chicken is done (the residual heat will gently cook the peas and carrots). Remove the chicken from the oven and arrange the chicken on top of the rice skin-side-up.

Sprinkle with the crushed chips and the remaining scallions and serve.

Loaded Pizza

Ingredients

1 to 2 tablespoons olive oil
2 pounds store-bought pizza dough
1/2 cup plus 1 tablespoon marinara sauce
1/2 cup plus 1 tablespoon barbecue sauce
1 cup shredded rotisserie chicken
1 1/4 cups shredded yellow Cheddar
1 1/4 cups shredded pepper jack cheese
2 slices deli ham, diced
3 slices cooked bacon, crumbled
1/4 cup pepperoni
1/2 cup sliced red bell pepper
1/2 cup diced zucchini
1 plum tomato, thinly sliced
1/2 small red onion, thinly sliced

Directions

Preheat the oven to 475 degrees F with a rack on the lowest rung.

Drizzle the oil in a heavy, rimmed half-sheet pan and turn to coat the bottom. Add the dough and press and stretch to the corners with your fingers. (If the dough doesn’t go all the way to the corners, let it rest for 5 minutes, then once it has relaxed a bit, stretch again.)

Combine 1/2 cup each marinara and barbecue sauce in a small bowl. Put the chicken in another small bowl and add the remaining tablespoon each of marinara and barbecue sauce. Toss to coat the chicken in the sauce.

Spread the BBQ marinara mixture on the pizza crust, leaving about 1/2-inch border around the edge. Sprinkle with 1 cup each Cheddar and pepper jack. For the meat side, top with the chicken, ham, bacon and pepperoni. For the vegetable side, top with the bell pepper, zucchini and tomato. Scatter the red onion over both sides. Sprinkle both sides with the remaining 1/4 cup each Cheddar and pepper jack.

Bake the pizza on the bottom rack until the crust is golden on the bottom and the top is browned and crusty, 25 to 30 minutes. Let cool in the pan for 5 minutes before cutting into squares to serve.

The Kitchen Family Sunday Sauce

Ingredients

Meatballs:

1 pound ground meatloaf mix (ground pork, beef and veal)
1/2 cup plain dried breadcrumbs
1/2 cup freshly grated Parmesan
1/3 cup finely chopped fresh parsley
1 teaspoon kosher salt
1/8 teaspoon crushed red pepper flakes
1 large egg, lightly beaten
3 tablespoons olive or canola oil

Sauce:

3 tablespoons olive oil
1 pound pork bones (neck or rib)
1 pound sweet or spicy Italian sausage links
2 small onions, small dice
1 tablespoon dried parsley or Italian seasoning
Kosher salt and freshly ground black pepper
5 medium cloves garlic, very thinly sliced
1/4 teaspoon crushed red pepper flakes
One 6-ounce can tomato paste
Three 28-ounce cans whole tomatoes, preferably San Marzano, puréed in a blender, cans reserved
1 teaspoon sugar
16 fresh basil leaves, torn

For Serving:

1 pound your favorite pasta, cooked
Grated Parmesan
1 loaf crusty Italian bread

Directions

For the meatballs: Spread the ground meat mixture in the bottom of a large bowl (or on a sheet pan). Add the breadcrumbs, Parmesan, parsley, salt, red pepper flakes and egg. Use your hands to lightly mix all of the ingredients together, being careful not to overmix. Roll the mixture into balls (2 to 2 1/2 inches in diameter). You should get about 10 meatballs. Place the meatballs on a sheet pan in the fridge to rest for about 30 minutes.

Cook the meatballs: Heat a large skillet over medium-high heat. Add the oil. Working in batches if necessary, cook the meatballs in a single layer, spreading them apart so as to not overcrowd the skillet. Cook, rotating the meatballs every couple of minutes to brown all sides, 8 to 10 minutes. Use a slotted spoon or spatula to remove them to a clean sheet pan or plate. Set aside.

For the sauce: While the meatballs are cooking, heat a large pot over medium-high heat. Add the oil and let it start to smoke slightly. Add the pork bones and sear until browned, 3 to 4 minutes per side. Remove from the pot and place on a plate or sheet pan. Add the sausage to the pot and brown, 2 to 3 minutes per side. Remove from the pot and add to the pork bones.

Reduce the heat to medium-low and add the onions, dried parsley or Italian seasoning, and salt and pepper. Cook, stirring occasionally, until softened and lightly golden, 6 to 8 minutes. Add the garlic and red pepper flakes and let cook until the garlic almost liquifies in the pot, about 2 minutes. Add the tomato paste and cook, stirring frequently, about 3 minutes.

Add the puréed tomatoes. Add 1 1/2 cups water to the tomato cans and swirl them around to rinse off the residual tomato that clings to the sides. Add the tomato water to the pot along with the sugar and half the basil. Season with a large pinch of salt and some pepper. Give the pot a good stir, then add the seared pork bones, sausage and meatballs. Bring to a simmer, then turn the heat down to low. Place a lid on top of the pot, but don’t cover it completely; leave a small opening to allow some steam to escape. Cook, stirring occasionally, until the sauce has thickened a bit and the meat is tender, 3 to 4 hours. Taste the sauce for seasoning and add more salt if needed. Add the remaining fresh basil and stir gently. Serve the sauce and meat over your favorite pasta with grated cheese on the side and with a loaf of crusty Italian bread.

Codfish Puppies

Ingredients

1/2 pound dried salted cod
1 tablespoon vegetable oil, plus more for frying
1/4 cup finely diced onion
1 celery stalk, finely diced
2 garlic cloves, minced
1 tablespoon cayenne pepper
1 scallion, finely diced
2 tablespoons chopped cilantro leaves
1 lime, zested and juiced
1 cup all-purpose flour
1 teaspoon baking powder
1/2 cup milk
1 egg
Lime wedges, for garnish

Directions

Place cod in a pot and fill with cold water, covering cod completely. Soak at least 12 hours, at room temperature Remove from water and rinse.

Heat oil to 360 degrees F in a deep pot until it comes about 2 inches up the side of the pan. In a medium saute pan, over medium heat, add oil and saute onions, celery, and garlic, until vegetables soften, about 5 minutes. Remove mixture to a bowl and let cool. Add cayenne, scallion, cilantro, lime zest and juice, flour, baking powder, milk and egg. Mix together well. With a fork, flake the cod, being sure to remove the skin. Add the cod to the batter. Using a 1-ounce ice cream scoop, scoop up fritter batter and place into preheated oil. (Fritters should measure about 1 1/2 inches in diameter.) Work in batches. Don’t add more than six at a time. Cook until fritters are golden and cooked through, about 6 to 8 minutes. Remove to a paper towel lined plate to drain. Serve with lime wedges.
