Parker’s Split Pea Soup

Total: 1 hr 40 min
Prep: 10 min
Cook: 1 hr 30 min
Yield: 5 to 6 servings
Ingredients
1 cup chopped yellow onions
2 cloves garlic, minced
1/8 cup good olive oil
1/2 teaspoon dried oregano
1-1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 cups medium-diced carrots (3 to 4 carrots)
1 cup medium-diced red boiling potatoes, unpeeled (3 small)
1 pound dried split green peas
8 cups chicken stock or water
Directions
In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 pound of split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. Serve hot.

Chicken Chili Sheet Pan Quesadilla

Level: Easy
Total: 40 min
Active: 15 min
Yield: 6 to 8 servings
Ingredients
3 tablespoons salted butter, melted
8 burrito-size flour tortillas
4 cups shredded Cheddar cheese
4 cups shredded rotisserie chicken
1 teaspoon taco seasoning
One 4-ounce can diced green chiles, drained
1 cup frozen corn, thawed
1/2 cup sliced black olives
1/2 cup salsa
Serving suggestions: 1 avocado, diced, sour cream, 1 lime, cut into eighths and several sprigs fresh cilantro
Directions
Preheat the oven to 450 degrees F. Brush a half sheet pan or rimmed cookie sheet with half of the butter.
Arrange 2 tortillas along the longest side of the sheet pan with half hanging over the rim; repeat with the other long side of the pan. Place one tortilla, also half hanging over, at each end. Place 1 tortilla in the center so the whole bottom of the sheet pan is covered.
Sprinkle evenly with half of the shredded cheese, all of the chicken, taco seasoning, chiles, corn and olives. Place spoonfuls of the salsa over the top and spread evenly. Top with the remaining cheese.
Place 1 tortilla in the center of the pan, on top of the filling, and then fold up the overhanging tortillas so that the filling is completely covered. Brush with the remaining butter, top with another sheet pan and press down firmly.
Bake until the tortillas are crispy and the inside is melted and hot, 20 to 25 minutes.
Carefully remove the top sheet pan. Slice the quesadilla into squares and serve with avocado, sour cream, lime and cilantro.

Twice Baked Potato Casserole

Total: 2 hr 30 min
Active: 50 min
Yield: 16 servings
Level: Easy
Ingredients
1 pound thin bacon
16 russet potatoes
6 tablespoons canola oil
4 sticks (1 pound) salted butter, plus more for buttering baking dish
2 cups sour cream
2 cups grated Cheddar or Jack (or a mix of both), plus more for topping
2 cups whole milk
4 teaspoons seasoned salt
6 green onions, sliced
Kosher salt and freshly ground black pepper
Directions
Preheat the oven to 400 degrees F.
Cook the bacon in a saute pan until crispy; let cool and then crumble.
Scrub the potatoes, then place them on baking sheets. Rub the potatoes with the canola oil and bake until tender, 45 minutes to 1 hour. Remove the potatoes and lower the oven temperature to 350 degrees F.
Slice the butter into pats and transfer to a large mixing bowl. Add the bacon and sour cream. With a sharp knife, cut each potato in half lengthwise and scrape out the insides into the mixing bowl. Tear up 3 of the skins and throw them in. Smash the potatoes with a potato masher. Add the cheese, milk, seasoned salt, green onions and some salt and pepper and mix together well.
Butter a baking dish, and then spoon the mixture into the dish, top with more grated cheese and bake until warmed through, 25 to 30 minutes.

I blacken the onion in peanut oil.
Olive oil and butter burns quickly at lower temps.
Onions do not add much unless they are blackened.

As a French person who grew up in a French household I got to say your split pea soup attempt suxs as pea soup has never called for Garlic eww yet the 1 Ingredient aka a ham bone + Diced ham was no were in sight.. you failed at a extremely easy no brain food just as all you British fail at making French Onion Soup…

I would rather soak the beans in a tablespoon of sea salt overnight or atleast for twelve hours, to avoid the effects of gas. It's also been posited that soaking beans breaks down some of their complex sugars, making them easier to digest.

I made this, after never having made split pea soup. Came out delicious. I wasn’t feeling well so I put all the split peas in at the beginning. I threw in a cubed, ham steak at the end.

I made a pot of this last night. Delicious! Grandkids ate it up. One thing: I decided to add some pre-cubed ham toward the end of the second 40 minutes. This ham was so awfully over-salted! Yuck. I had to dilute the soup with water and extend the second simmer, then use my old trick of putting a couple halves of a big Russet in the soup. This absorbs a lot of the salt. The soup was again edible. Ina, the two textures from the soft and semi-firm peas was a great idea. It added a different dimension and mouthfeel to this fine soup. Thanks! 👍
